I attack with Soi Fon Deadly then my opponet declares a defender I discard a squad 2 from hand with only squad 2 people in my party and Discard the defender. Hitting them for 6 power damage is that a leagal move?

Unfortunately it is not a legal move.
From the ARD:
1. Deplete the declared character - that character is now attacking.
(Priority Window Opens – This window begins with effects that trigger off of when a character attacks. In this window, you would use effects that would keep someone from possibly defending with a character, such as depleting them.)
You would have to discard a character before your opponent declares a defender.
